Perhaps it's a throwback to our caveman days, but there is just something fun about eating with your fingers on occasion. This is one of the easiest, quickest and most flavorful finger foods you can prepare. There is very little work involved, and most of it can be done in advance. When it's time to eat, this can be prepared, start to finish, in about 10 minutes.There are almost unlimited options to tailor this dish to what you have on hand and what your family likes. This recipe is guaranteed to make you a star.
You can use most anything to make your nachos. Ground beef, of course, or left over pot roast, chicken, pork chop or even all vegetarian. When I brown hamburger for a dish, I often use an extra pound or so and put it in several small bags in the freezer. Then I have an instant source for nachos and pizza as well as to inhance a small portion of chili or spaghetti sauce.
Chop whatever meat you're going to use and put it in a skillet with a pack of taco seasoning and a little water. It will flavor your meat perfectly and create a small amout of sauce. While that is thickening, heat a can of refried beans with 1/4 cup of water in the microwave.
Again, depending upon what you like, you can do most of the prep work ahead. I usually chop some onion, bell pepper and jalapenos ahead and place in a zip bag and it's ready. I have a small can of diced green peppers and some salsa handy (both come in a variety of heat levels). Chop a tomato and a little lettuce. You can also get some olives, or jalapenos.
When it's time to start, simply spread out tortilla chips on a pizza pan or even a baking sheet (Doritos add even more flavor if you wish). Distribute all of your toppings on top of the chips. Start with the refried beans and meat, spoon the salsa on and top with lots of shredded cheese (cheddar and mexican blend works great) Add the rest of your toppings reserving the lettuce and tomato for just before serving.
Put your nachos in the oven under the broiler, but don't walk away. It will only take a couple of minutes to heat everything and melt the cheese. It's only seconds between perfectly melted and the beginning of burning. As soon as the cheese is all melted your nachos are ready. Top with the lettuce and tomato and serve immediately perhaps with some sour cream and/or guacomole.
This will quickly become a family favorite, and it can be prepared a little differently every time. Nachos make a great go-to dish when you simply are short of time and energy. You can even prepare your nachos with each side different, just as you would a pizza. Enjoy.
